Apple-Cherry Crisp with dried apples

I've been organizing space for some of my new food storage items I got recently, and have wanted to try out the dehydrated apples. Today I made this tasty dessert which I got from the Pampered Chef's It's Good For You cookbook. It's in the oven right now and I'll add a photo later tonight. I hope it's good!

Step One--prepare apple and cherry mixture
  • 6 cups dehydrated apple slices, rehydrated with 3 cups boiling water
  • 1/2 teaspoon cinnamon
  • 1 can (21 ounces) cherry pie filling
Pour fruit mixture into casserole dish or rectangle pan.

Step Two--prepare streusel topping
  • 1/4 cup (1/2 of a stick) butter
  • 1/4 cup pecans
  • 1 cup old-fashioned or quick oats
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
Melt butter, then mix in remaining ingredients. Spread topping over top of fruit mixture. Bake at 375 for 30 minutes. Serve with Cool Whip, whipped cream or ice cream. Delicious!

This sounds really yummy. I'd make me some, except I have no dehydrated apples. I do have potato pearls, though. Do you think they'd work instead? ;)

Kelly, I am a crisp FANATIC!! And this crisp looks delicious! So did you use the dried apples that you get from the church cannery? Or at least something similar? I'm really curious - I love it when I can use my food storage for meals that taste GOOD :)

Yes, Maryanne! It's using my apples from the cannery! They are a tasty snack by themselves too. Chrsitopher took some to school today in a zippered plastic bag.

Robin, I have yet to try out the potato pearls, but I have heard they are really tasty.

By the way, it's ABOUT a half of a #10 can from the LDS family canning.

That looks so yummy. Maybe I will randomly stop into your place to have a bite.

Mmm. Looks good. I'm not so much of a cherry fan, but I'll have to try that one.

This is great timing--I am teaching provident living classes once a month, essentially on getting and using food storage. I will use this when I teach about oats next month. And yes, the potato pearls are delish--and low fat! We love them.
