No Bake Cookies

There are times when I just crave chocolate and tonight I concocted some No Bake Cookies for the first time in probably about ten years. They just sounded good to me. Plus I didn't have any eggs, so I decided on this old standard. I didn't have a recipe handy, so I did an Internet search and found several versions. The one I tried was this.

  • 1 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 4 tablespoon cocoa
  • 1/2 cup peanut butter
  • 3 cups quick oats
  • 1 teaspoon vanilla
Put sugar, milk, butter, cocoa into saucepan over medium heat. When it comes to a full rolling boil (not just a wimpy simmer), cook it for an additional 1.5 minutes. Remove from heat and add the three remaining ingredients--vanilla, peanut butter, oats. Mix everything together, then drop a cookie-sized mound of the mixture with a small scoop onto wax paper until they are all formed. As they cool down, the cookies will get firm and be ready to eat without baking. They are delicious and can be prepared quickly. My kids had never tasted No Bake Cookies before now. Kelly popped one in his mouth right when he walked in the door from work and I made him stop eating them until he had dinner, but mainly so I could take a picture of the cookie plate first.

The few experiences I've had with no-bake cookies have been far from satisfying. I'd like to try a good recipe, though, as I'm sure it makes a big difference.

I love these. We used to make them all the time in college becuase they were easy ingredients to have on hand. I made them for the firs time in years as well about three weeks ago when we both needed a treat on limited supplies.

That recipe sounds really good, I think that I might have to give it a try, I think that your cookies turned out looking fantastic, I am sure that they tasted just as good.

We make these all the time- yum! I have tasted some bad versions of them though where the cookies are rock hard. The recipe I have makes them perfectly soft but held together. I am guessing you like this one you found?

I grew up with my mom making No Bake cookies. I LOVE them! Whenever I have them now, they bring back such great memories :)

I love no bake cookies. When Tom walked by and saw the photo of these on the screen he said EWW! I think he has bad memories of the ones he used to make on his mission. I found his mission recipe book and that recipe but they were not called no bake, they were called, "gorilla poop cookies". EWW!
i just read megs comment and i was just going to say that. the girls in her apartment seriously made them like every day - and i lived next door so it was easy to get my hands on them! sometimes they made them with peanut butter and let's just say i visited her apartment a lot!! my sister in law actually made them at christmas time and it brought back some memories for me. you always have the best recipes!

aaaah, i'm doing the atkins diet right now and this is killin' me cuz they're like my fav thing in the world. if i wasn't losing weight so easily i'd totally cheat and make these, seriously....they are the BEST!!!!

Book of Mormon Stories Pool Party!

Hopefully this title, Book of Mormon Stories Pool Party , does not sound irreverent, because as an Activity Days leader, I felt compelled to come up with a fun end-of-the-summer event that is also uplifting, and after all, who doesn't love a splash in the pool on a hot day in August?  My current church calling, or official role that I volunteer for, allows me to plan two activities each month for girls ages 8 to 11, that will encourage them to learn and live the gospel, serve others, and use the talents Heavenly Father has given them, to learn to do many good things.  This year's seminary course of study for high school students is The Book of Mormon, and since I am a huge fan of this inspired book of scripture, I came up with this idea to have each girl show up to my house with a written summary of one of her favorite stories from within its many pages, and share it with the rest of the girls, while outside in our swimsuits near our backyard swimming pool!  As each girl shares

This picture was taken at church a few days ago while Kelly was on his way to the US for work this week. We have some wonderful news to share.  We are adopting 7-year-old Yeh Min Yu, who has been in our home off and on the last couple of months.  There's a lot that goes into making this official, dealing with US Homeland Security to arrange for her immigration visa, Taiwan courts and Chinese documents, getting a home study done by a licensed, qualified person, applying for a passport.  You have no idea.  I'll be glad when it's all done, but I couldn't wait to share this bit of joy with everyone.  We will name her Hannah to go on her new US birth certificate.  She's excited and nervous to go to America with us.  She can say more than 100 words in English so far.  Some of her favorite things to say are "small dog, butterfly, apple, pig."  She says it more like pig-uh.  We love her and feel this is one of the reasons we came to Taiwan.  Who would have thoug

Elder Larson to return from Thailand soon

Soon is relative, I suppose. Our son has been away from home more than a year and a half as he has been volunteering as a full-time missionary in the Thailand Bangkok Mission of The Church of Jesus Christ of Latter-day Saints since September 14, 2016. He will be home in four months and is working so hard, knowing his time there is winding down. He has been assigned to train Elder Ben Meyer, from Sydney, Australia, as they serve in Ubon, Thailand. Christopher has been there since November. We are very proud of his dedication and hard work. This week in Thailand, the new prophet, President Russell M. Nelson, with his wife, Wendy Nelson, along with one of the Twelve Apostles, Elder Jeffrey R. Holland, and his wife, Patricia Holland, will be on their world ministering tour and be where our son is. The Church members and missionaries in Thailand are very excited and happy for this special visit! I can't wait to hear how it goes, and I look forward to pictures and stories to come.
