Valentines Eve dinner for eight

For several years, I have wanted to host a Valentines dinner party at my house and finally got some interest this year. I kept it to a cozy and manageable group of eight, but it still kept me busy all day. It went really well and here are a few pictures. The floral centerpiece was from my favorite local shop, Lakeline Florist.Michelle and Jim were one of the three couples who attended. She's my son's pediatric dentist. They brought us four bottles of Martinelli's sparkling cider...look out! Things might get a little crazy.
Shane and Jenn were also among the guests. They brought me a cheerful bouquet of flowers, something I can always be grateful for.
Buddy and Tom also joined the dinner party. Thank you for the very pretty note pad with the black tone on tone cover.
Lindsey invited her friend, Jenn, to spend the night and help cook and serve for us. They were a huge help and did an awesome job waiting on us so carefully and thoughtfully. Here's Lindsey preparing for the first course, spreading microgreens on the plates as a bed for the Pan-seared Scallops with Saffron Sauce, which were simply heavenly, cooked perfectly.
Here's Jenn, following instructions to a T, not flipping the scallops until the 3 minute mark had passed.
This was my favorite course and since it was in the beginning, I photographed it well. I must have been enjoying myself because the last course was the only other plated food picture I captured.
The next course was Tomato Basil Soup, followed by a salad course with Mixed Field Greens and Stilton, Blackberries, and Citrus Vinaigrette. Like I said, I only got pictures of the appetizer.
And the final service was a very delightful cup of Dutch Hot Cocoa.
One more round of photos before we had a long talk-fest, which was pleasant and relaxing.
Buddy and Tom, our fit for life models. Rumor has it, she'll be running a marathon next week. No wonder she looks so incredible.
The doctors, whom we've gotten together with over the years somewhat regularly. Kelly and Jim, engineers, always hit it off well. Michelle and I have always had an easy time liking each other's company too.
Jenn and Shane have lived here in Austin the shortest length of time and we are looking forward to getting better acquainted with them. The husband have already started making plans for that to happen soon.
And last but not least, I can't stand pictures of myself, but I told them I'd post some if they were okay. They're just that too. Who knows, in ten years, I might look back and say, "Wow, I was a babe back then." So here it is for posterity and my own good to look at in 2019 on Valentines Eve. Below, here's a shot of the women.
Now the men that we all love so much and who make our lives so full of romance and bliss.
And one more shot of my gorgeous flowers.
Here's the complete menu:
  • Pan-Seared Scallops with Saffron Sauce
  • Tomato Basil Soup
  • Mixed Field Greens with Stilton, Blackberries and Citrus Vinaigrette
  • Shitake Mushroom and Spinach Stuffed Pork Tenderloin
  • Potatoes Horseradish Gratin with Caramelized Onions
  • Profiterole Puffs with Chocolate Glaze
  • Dutch Hot Cocoa

I am going to bed now after an exhausting day. So worth it though!

Looks fun. Of course I can only guess, seeing as how I was sitting at home eating cold pizza at that exact time.

Book of Mormon Stories Pool Party!

Hopefully this title, Book of Mormon Stories Pool Party , does not sound irreverent, because as an Activity Days leader, I felt compelled to come up with a fun end-of-the-summer event that is also uplifting, and after all, who doesn't love a splash in the pool on a hot day in August?  My current church calling, or official role that I volunteer for, allows me to plan two activities each month for girls ages 8 to 11, that will encourage them to learn and live the gospel, serve others, and use the talents Heavenly Father has given them, to learn to do many good things.  This year's seminary course of study for high school students is The Book of Mormon, and since I am a huge fan of this inspired book of scripture, I came up with this idea to have each girl show up to my house with a written summary of one of her favorite stories from within its many pages, and share it with the rest of the girls, while outside in our swimsuits near our backyard swimming pool!  As each girl shares

Our new daughter!

This picture was taken at church a few days ago while Kelly was on his way to the US for work this week. We have some wonderful news to share.  We are adopting 7-year-old Yeh Min Yu, who has been in our home off and on the last couple of months.  There's a lot that goes into making this official, dealing with US Homeland Security to arrange for her immigration visa, Taiwan courts and Chinese documents, getting a home study done by a licensed, qualified person, applying for a passport.  You have no idea.  I'll be glad when it's all done, but I couldn't wait to share this bit of joy with everyone.  We will name her Hannah to go on her new US birth certificate.  She's excited and nervous to go to America with us.  She can say more than 100 words in English so far.  Some of her favorite things to say are "small dog, butterfly, apple, pig."  She says it more like pig-uh.  We love her and feel this is one of the reasons we came to Taiwan.  Who would have thoug

Elder Larson to return from Thailand soon

Soon is relative, I suppose. Our son has been away from home more than a year and a half as he has been volunteering as a full-time missionary in the Thailand Bangkok Mission of The Church of Jesus Christ of Latter-day Saints since September 14, 2016. He will be home in four months and is working so hard, knowing his time there is winding down. He has been assigned to train Elder Ben Meyer, from Sydney, Australia, as they serve in Ubon, Thailand. Christopher has been there since November. We are very proud of his dedication and hard work. This week in Thailand, the new prophet, President Russell M. Nelson, with his wife, Wendy Nelson, along with one of the Twelve Apostles, Elder Jeffrey R. Holland, and his wife, Patricia Holland, will be on their world ministering tour and be where our son is. The Church members and missionaries in Thailand are very excited and happy for this special visit! I can't wait to hear how it goes, and I look forward to pictures and stories to come.
