Easter Sunday (Lime Pineapple Sparkling Punch)

We put together a very last-minute (two days' notice) dinner with four families from church. Hai-Li brought her niece and son, Justin.
Kelly practices his Chinese with her to get ready for his first trip to Taiwan in four weeks.

The weather was drab and wet the day before, but Sunday turned out to be a perfect day to entertain outside in our backyard.

Lonna, at least 20 minutes before realizing she'd have to dive into the shallow end of the pool to rescue her 3-year-old daughter, who stepped in, fully dressed and sank in panic, submersed under water with her eyes and mouth wide open, staring upward to the crowd of people watching her. (Our first incident of this sort. Luckily, it was an extremely brief moment, but it was pretty scary, nevertheless.)
Looks like we gave the little kids too big of a lead and most of the Easter eggs were already snatched up.

We had a really nice afternoon and enjoyed our friends and their young families for a potluck dinner. I made ham, turkey, and my mother-in-law's "Heavenly Potatoes" recipe, plus the tasty things our guests brought.
Kellie and her family brought us this adorable centerpiece featuring fresh, hollowed eggs. So creative and cheerful! Thank you!
Kelly and I served a refreshing Lime and Pineapple Sparkling Punch. (He was my mixer and chunk-chipper.)
Lime Pineapple Sparkling Punch:
  • 6 to 8 limes, cut in half, then juiced
  • 1 big can pineapple juice (48 ounces)
  • 1 cup sugar
  • 2 liters Perrier, lime flavored
Mix together fresh squeezed limes with pineapple juice and sugar. Free in bowl or pitcher. Before serving, pick away or chunk up the frozen concoction, put into serving container, than add the sparkling water. Serve with ice.
Five-minute Birds Nests
  • 1 bag of white chocolate chips
  • 1 bag of chow mein noodles
  • coconut, tinted with green food coloring
  • Pam non-stick cooking spray
  • candies that look like eggs (jelly beans, etc.)
Place chocolate chips in microwaveable bowl, cooking on high for one minute in microwave, stir. Heat additional 30 seconds, then stir, and 30 seconds longer if needed. Pour melted chocolate over chow mein noodles, then mix gently to coat evenly. Spray an aluminum or stoneware muffin pan with non-stick spray, then divide nests into the number of muffin wells. Form indented shape from the centers, then add tinted green coconut and candy eggs. Next year, I'll try Julie's Rice Krispy Treat birds nests.

Lindsey had her wisdom teeth, all four, extracted two days before this and she's looked like a chipmunk all week. My poor baby, it's been a rough time for her.
Kelly is the official Easter egg decorating parent of our family. I just provide all the materials and turn the task over to him. He and the kids look forward to their "thing" every year.

What a nice Easter! The nests are clever, may have to try them next year. The green bowl is v. cute--Walmart? who knew? I love the creativity of Easter egg decorating. All of our family likes to try it. How often does one have an art project that everyone wants to get in on? Glad the pool incident turned out okay.

Kelly, You are so awesome to always have people over! I really use to do that allot but seem to do it less and less. What is wrong with me? Kid #1, Kid #2, Kid #3, or Kid #4 or all of them? Looks like you had a nice Easter.

You know that I will continue to bother you about getting that heavenly potato recipe, because it was sooooo good.

We had a really good time, and the egg hunt was a total success with our kids. I mean even Harrison was picking them up and placing them in his bucket. Thanks so much for having us over, I am sorry that Gwen had to Cristen your pool like that, but I sure am glad that you have that little shallow part.

Everything always looks so beautiful at your parties! I don't know how you have the energy to do so much, but I sure admire that! It looks like everyone had a great time.

Book of Mormon Stories Pool Party!

Hopefully this title, Book of Mormon Stories Pool Party , does not sound irreverent, because as an Activity Days leader, I felt compelled to come up with a fun end-of-the-summer event that is also uplifting, and after all, who doesn't love a splash in the pool on a hot day in August?  My current church calling, or official role that I volunteer for, allows me to plan two activities each month for girls ages 8 to 11, that will encourage them to learn and live the gospel, serve others, and use the talents Heavenly Father has given them, to learn to do many good things.  This year's seminary course of study for high school students is The Book of Mormon, and since I am a huge fan of this inspired book of scripture, I came up with this idea to have each girl show up to my house with a written summary of one of her favorite stories from within its many pages, and share it with the rest of the girls, while outside in our swimsuits near our backyard swimming pool!  As each girl shares

This picture was taken at church a few days ago while Kelly was on his way to the US for work this week. We have some wonderful news to share.  We are adopting 7-year-old Yeh Min Yu, who has been in our home off and on the last couple of months.  There's a lot that goes into making this official, dealing with US Homeland Security to arrange for her immigration visa, Taiwan courts and Chinese documents, getting a home study done by a licensed, qualified person, applying for a passport.  You have no idea.  I'll be glad when it's all done, but I couldn't wait to share this bit of joy with everyone.  We will name her Hannah to go on her new US birth certificate.  She's excited and nervous to go to America with us.  She can say more than 100 words in English so far.  Some of her favorite things to say are "small dog, butterfly, apple, pig."  She says it more like pig-uh.  We love her and feel this is one of the reasons we came to Taiwan.  Who would have thoug

Elder Larson to return from Thailand soon

Soon is relative, I suppose. Our son has been away from home more than a year and a half as he has been volunteering as a full-time missionary in the Thailand Bangkok Mission of The Church of Jesus Christ of Latter-day Saints since September 14, 2016. He will be home in four months and is working so hard, knowing his time there is winding down. He has been assigned to train Elder Ben Meyer, from Sydney, Australia, as they serve in Ubon, Thailand. Christopher has been there since November. We are very proud of his dedication and hard work. This week in Thailand, the new prophet, President Russell M. Nelson, with his wife, Wendy Nelson, along with one of the Twelve Apostles, Elder Jeffrey R. Holland, and his wife, Patricia Holland, will be on their world ministering tour and be where our son is. The Church members and missionaries in Thailand are very excited and happy for this special visit! I can't wait to hear how it goes, and I look forward to pictures and stories to come.
